Raw Marinated Anchovies

1 Kg fresh anchovies 4 Bay leaves
4 Garlic cloves chopped
5 Table spoons fresh parsley, chopped
1 Table spoon honey
Salt
Vinegar

Remove heads and clean anchovies. Split them lengthways and remove the main bone. Lay half the fish in a dish and springle with salt, honey, garlic and half the bay leaves and parsley. Lay in top the remaining fish and springle with the remaining bay leaves and parsley. Cover with vinegar.
Cover the dish and leave for 3-4 days. Strain the anchovies from the vinegar and serve them springled with fresh parsley.
